Yummy Banana Bread!

Happy Monday~
First of all thank you so much for the wonderful comments on my giveaway!! You guys are the best.  I am so excited to get to know all my new followers. I enjoyed reading and responding to each comment..it just warms my heart that you all are interested my little handmades :)  I will draw a winner on Saturday.


I have a yummy recipe to share today...I swear my kids don't eat the bananas I buy so they will go bad and they can tell me.."hey mom, time for banana bread, the bananas are brown".  LOL
I had enough bananas last week to make two loaves, and they looked and smelled sooo yummy!  I thought of all my wonderful blog friends, and since I didn't have enough to send you all your very own loaf, I will share the recipe for now. :)

1 cup of sugar
1 stick unsalted butter~softened
1 cup (2 medium) bananas
2 eggs

1 1/2 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/2 cup chopped nuts (optional)

In large bowl mix sugar, bananas, butter and eggs.  Add dry ingredients, blend until moistened. Stir in nuts.
Pour into greased loaf pan and bake at 350 for 50-60 minutes...Enjoy!
You can substitute apples for bananas, just add some cinnamon with the apples...yummm

I love this time of year when we can bake without feeling like we'll be making the house hotter than it is. (Obviously, we don't have central air!) Cool fall mornings are my favorite time to bake. I'll be making some banana bread soon, as I've got a stockpile of banana's in the freezer!
I can almost smell it.
